Tobers, the so-called "pig nut" can vary considerably in size and shape. It has a thin, brown, papery skin with white crunchy flesh inside. The texture and flavour is similar to carrot, which is a relative of this plant. The thin skin is partly removed from the smaller tuber. Tubers are best from a dormant or a young plant which aids in tracing the root

Unearthing the tuber by following the thin roots. Tubers may be up to 15cm below the surface, and may not be directly below the plant.
